About Us
It was 45 years ago that Falafel King first opened its doors on the famous Pearl Street in Boulder. And we're still going strong today for one reason: our food. Falafel King isn't fancy or trendy; it's just great food at the right price, served quickly in a pleasant environment.
Our owner, Avner Gilady, was born in Yavne, Israel. He studied in a kibbutz (a communal farming cooperative), where he gained the leadership and business skills to maintain a legendary restaurant for so many decades.
We don't have a "celebrity chef" at Falafel King. Our chefs are our mothers, grandmothers, and great-grandmothers, living for generations in the Middle East, preparing delicious food for their families. Here at Falafel King, we continue creating their authentic dishes using traditional ingredients and techniques. We never skimp or take shortcuts. We grind our spices right before we add them; we use fresh-squeezed lemons, extra-virgin olive oil, and tahini that's among the best in the world, from Lebanon or Israel.
